Cobweb Soup and Vegetable Monsters!

We were lucky enough to be sent this box of fruit and veg by the good folk at innocent drinks with the request that we turn its contents onto something vegtably monstrous of fruitily freaky for Halloween!

We created Lurfeshnag. There was a hint of Frankenstein about our glee as he was constructed.

 

Perhaps more worrying was our delight as he was beheaded, skinned and then torn limb from limb before being boiled alive and then pureed to make this delicious offering for All Hallows Eve.

 

Ingredients (serves 4)

 

1 onion, skinned and chopped

1 butternut squash, skinned, disembowelled (deseeded) and roughly chopped

3 carrots, sliced

2 tbsps red lentils

1 tsp garam masala (or your favourite spice blend)

1 clove of garlic, crushed

1½- 2 pints of boiling water

1 tsp Marigold Bouillon

Soured cream to serve

 

Method

 

• Gently fry the onion in a little olive oil until translucent but not browned.
• Add the squash and carrots and fry for one minute.
• Add the lentils, spice and garlic and fry for a further minute.
• Add the bouillon to 1½ pints of boiling water, stir and pour over the vegetables.
• Bring to the boil and simmer for ten minutes or until the vegetables are soft.
• Blend with a hand blender until smooth. Add a little more water if necessary to achieve a nice soupy consistency.
• Decorate with a swirled spiral of soured cream then, using a cocktail stick, draw the cream outwards from the middle to the edge to create a spider web effect.
• Serve hot with crusty bread rolls.
